The faster you are, the more points you get! As levels progress the dealer gets faster and faster and more 21s are required to complete the levels.

Every 5 levels there is a bonus stage that offers a new challenge such as only being able to select cards vertically and horizontally. Every 20 levels is a race level where the dealer will deal nothing but 10's and Aces and you must get 100 21's as fast as possible!
